Christmas Countdown: Betty’s Red Cabbage with Apple

Another tasty accompaniment for your Christmas Day dinner. This can be made now and frozen in advance for the big day. 

Betty was the late partner of my Grandad, and this recipe is an important part of our Christmas Day meal. 

You will need: 

4 small apples, finely sliced

2 small onions, finely sliced

1 small red cabbage, finely shredded, no white bits 

 30g butter

100ml vinegar, preferably red wine

30g brown sugar

1/2 tsp ground cinnamon

1/2 tsp ground nutmeg 

A small glass of red wine if you like, especially if you’ve not used red wine vinegar. 

How to make it:

  1. Cook the red cabbage, apple and onion in butter a few minutes.  
  2. Add the vinegar, brown sugar and spices.  
  3. Lower the heat and cook for about half an hour, with the pan lid on, until tender. It will then look like this:    
  4. Eat straight away or leave to cool before freezing. Delicious!
